Yields1 Serving

 3 cups broccoli florets and stems, roughly chopped
  cup pine nuts or sunflower seeds
 4 tbsp olive oil
 4 cloves garlic or garlic scapes, minced
 ¼ cup fresh parsley, chopped
 1 lemon, juiced
 1 tbsp balsamic vinegar
 2 cups kale, chopped
 salt and pepper, to taste
 crushed red pepper flakes, to taste (optional)

Preheat oven to 425 degrees.

On a large baking sheet, toss together broccoli, pine nuts or sunflower seeds, 2 tbsp olive oil, garlic or garlic scapes and a healthy pinch of salt and pepper.

Roast in the oven for 20-25 minutes or until the broccoli begins to char. Remove broccoli from oven and stir in parsley.

In a bowl, combine 2 tbsp olive oil, lemon juice, balsamic, crushed red pepper flakes and season to taste with salt and pepper. Stir well to combine.

Once the broccoli is finished roasting, pour the dressing over the broccoli and stir in chopped kale. Stir well to combine and evenly coat salad.

Transfer the salad to a bowl and enjoy!
