 4 Parsnips, cut into 2" pieces
 4 Carrots, cut into 2" pieces
 ¼ cup Chopped Chives
 6 tbsp Butter, divided
 Salt and Pepper, to taste

Bring a large pot of salted water to a boil.

Add chopped parsnips and carrots to the water and cover, reducing the heat to medium-low. Simmer until the carrots and parsnips are tender - about 15-20 minutes.

Once the carrots and parsnips are cooked through, drain the vegetables and return them to the pot. Reduce the heat to low and add the chives and 3 tablespoons of butter.

Mash the vegetable mixture using a potato masher. Once partially mashed, add the remaining 3 tablespoons of butter and mash until the desired texture and consistency is reached.

Season with salt and pepper to taste and serve.
