 1 Red Onion, cut through the root end into 8 wedges
 Vegetable Oil
 Salt
 2 Large Heirloom Tomatoes, chopped
 6 Hot Peppers, 3 deseeded and diced, 2 thinly sliced
 2 tbsp Fresh Lime Juice

Prepare your grill for medium-high heat or turn on your broiler.

Toss onion wedges with oil and season with salt. Grill or broil until the onions are blistered and charred on each side, turning occasionally. About 8-10 minutes. Allow onions to cool and then dice.

Toss charred onions, chopped tomatoes, hot peppers, and lime juice in a medium bowl and combine well. Let the mixture sit and taste periodically, seasoning with salt and additional lime juice as desired.

Cover and let stand or chill for at least 30 minutes before serving.
