Hot Pepper and Garlic Vinegar

 8 Hot Peppers, whole
 8 Garlic Cloves, thinly sliced
 1 ½ Inch Piece of Ginger, thinly sliced
 2 cups Distilled White Vinegar
 1 tbsp Sugar
 1 ½ tsp Salt

Place hot peppers, garlic and ginger in a glass jar.

In a medium saucepan, bring vinegar, salt and sugar to a boil and stir to dissolve the salt and sugar.

Once the salt and sugar is dissolved, pour the hot brine over the peppers, garlic and ginger in the jar.

Let cool, uncovered, for about 30 minutes.

Once cooled, cover the jar and chill for at least 4 hours.
