Carrot, Apple and Celeriac Mash

 1 Celeriac, peeled and cubed
 3 Carrots, sliced
 4 Apples, peeled and cubed
 4 tbsp Sour Cream
 1 tbsp Butter
 4 tbsp Parsley, chopped

Bring a large pot of water to a boil.

Put celeriac, carrots and apples in the boiling water and cook for 20 minutes until tender.

Drain the veggies and apples and return to the pot.

Mash roughly and stir in the sour cream, butter and parsley. Stir well to combine.

Serve warm and enjoy!
