 ¼ cup Plain Greek yogurt
 1 tsp Finely grated orange zest
 3 tbsp Fresh orange juice
 1 tbsp Fresh lemon juice
 1 tbsp Finely chopped fresh dill
 5 Beets, peeled and julienned
 2 Carrots, julienned
 Salt and pepper, to taste

Whisk yogurt, orange zest and juice, lemon juice, and dill in a medium bowl.

Add beets and carrots to the bowl and toss to combine. Season to taste with salt and pepper.
